Several different dishes are called "Mixed vegetables"; they all consist primarily of different kinds of vegetables cut into pieces and mixed together, then either served as-is or else cooked, typically by sauteing.
The Albanian mixed vegetables dish, Turli perimesh, has the following recipe:
- 2 lbs various vegetables (peppers, eggplant, okra, zucchini, potatoes, etc)
- 1/2 cup oil, divided
- 1 cup chopped onion
- 1 cup peeled chopped tomatoes
- 1 tablespoon chopped parsley
- Salt
- Pepper
Serves 4 people.
